So a few days weeks ago on Instagram I posted a picture of our dinner.  It’s super yummy, and super easy, so I decided I would share the recipe with you all.
If you are like me, you love tacos, but despise the clean up. Â Seriously I think I dirty almost every dish in the kitchen when I make tacos. Â Ain’t nobody got time to clean up that mess. Â That is where this taco bake casserole came in. Â Put all the ingredients together and throw it in the oven. Â Easy-peasy lemon squeezy.
Step One:
Cook rice according to package.
Step Two:
Cook beef according to taco seasoning direction
Step Three:
Place two tortillas on the bottom of the pan.
Step Four:
Spread half a can of refried beans on top of the tortillas.
Step Five:
Top that with half a can of corn.
Step Six:
Put 1/2 of the rice on top of the corn.
Step Seven:
Put 1/2 of the prepared beef on top of the rice.
Step Nine:
Next, put on 1/2 a can of the drained black beans.
Step Ten:
Sprinkle with 1 cup of cheese.
Step Eleven:
Repeat layers, bake at 350°.
I know there are a lot of steps, but really it’s so easy! Â Plus it makes a lot of food.

- 1 package knorr mexican rice
- 1 14.5 oz can corn
- 1 14.5 oz can black beans
- 1 14.5 oz can refried beans
- 1 package taco seasoning
- 4 8 inch flour tortillas
- 2 cups cheese
- Cook ground beef according to taco seasoning package.
- Spray bottom of a 9 x 13 pan with cooking spray. Place two tortillas on the bottom.
- Top with 1/2 can of refried beans.
- Top the beans with 1/2 the can of corn.
- Put 1/2 the rice on top of the corn.
- Next spread 1/2 the taco beef on top of the rice.
- Sprinkle with a cup (or more if you wish) of cheese.
- Repeat the layers.
- Bake for 25-30 minutes at 350 degrees.
