I’ve been trying to come up with more easy to go to dinner recipes. Some days after running around all day I have no desire to stand in front of the stove, or tackle a recipe that is super complicated. This recipe comes together quickly, is cheesy, and is just spicy enough.
- 16 oz smoked sausage
- 1 oneion
- 2 cups fresh spinach, chopped
- 1 10oz can tomatoes and chilies
- 8-10 oz bow tie pasta
- 2 tablespoons butter
- 2 tablespoons flour
- 1.5 cups chicken broth
- 2 cups shredded cheddar cheese
- Boil water, and add pasta.
- Add a drizzle of olive oil to a pan, and add onion, saute until almost soft, then add the spinach and continue to saute.
- Slice the sausage and add it to the pan and let sausage brown, and heat through.
- Add the can of tomatoes drained.
- By this time the noodles should be cooked, drain and add to the pan with the sausage.
- In the pan you cooked the noodles, melt two tablespoons of butter. Add two tablespoons of flour and let cook until bubbly. Add chicken broth, and cook until thickened. Then add cheese, and cook until melted.
- Mix everything together and enjoy!
To start off boil water and cook about 8-10oz of bowtie pasta until done.
While that is happening saute some onions in oil until they are almost soft.
Then add about two cups of chopped spinach, and continue to saute.
Add smoked sausage (I used turkey sausage), and fry until slightly browned, and heated through.
Add a can of tomatoes with chilies.
Once the pasta is done, add it to the pan with the sausage.
In the pasta pan, melt the butter.
Add flour, and cook until slightly bubbly.
Add chicken broth, cook until it starts to thicken up.
Add the cheese, and stir until melted.
Combine with the pasta dish, and enjoy.
This was so easy to make, and you can totally customize it. No spinach? Use some frozen veggies. If you aren’t a fan of spice, then use a plain can of diced tomatoes. Want more spice? Add some crushed red pepper. Really, the possibilities are endless!
