Smoked Sausage Au Gratin Skillet with Eckrich

cheddar cheese

bag of frozen vegetables, thawed
Instructions
Drizzle olive oil in pan, and brown smoked sausage. Then remove from pan and keep warm.
Peel potatoes, then slice about an 1/8 of an inch. Place in pan and fry for about two minute.
Add water, milk, and a dash of salt and pepper and bring to a boil. Reduce heat, cover, and allow to simmer for 10-15 minutes.
After 10 minutes add the bag of thawed frozen vegetables, and the smoked sausage to the pan. Cover, and continue to simmer for five minutes.
Remove from heat and sprinkle with cheese.
