So the other day I was playing with the girls when I realized that it was getting close to starting dinner. I look at our menu to see what I am supposed to make to find what I had planed (beer can chicken) wasn’t going to happen, you know since it takes about 3 hours to make. So I took a look in the cupboard and freezer in hopes of finding something I could throw together. Luckily I had some ingredients on hand, and this recipe was created.
I love how easy this recipe is! Â Plus the creamy cheesy-ness is a winner as well.
And, did I mention, simple.
Start off by cooking your macaroni according to the package. I used elbow macaroni, but shells or rotini would work great too.
While the pasta is boiling, saute the onion and sausage. After the onion is softened a bit add the frozen veggies, and continue to saute for about 5 minutes.
After the pasta is done mix everything together in a lightly greased casserole dish.
Next up is to make the cheese sauce. I just used the same pan that I boiled the pasta in. Melt the butter, then add the flour to make a roux. Slowly add the cream, and stir until slightly thickened. After add the cheese and stir until melted.
Mix the cheese sauce into the casserole dish and then top with shredded cheese and breadcrumbs. Bake for about 25 minutes at 350.
There you have it! An easy and tasty dinner.
- 3 cups macaroni
- 1 onion diced
- 12 oz frozen veggies
- 12 oz smokes sausage
- 1/4 cup butter
- 2 T flour
- 1 cup whipping cream
- 2 1/4 cups cheddar cheese divided
- 1/4 cup bread crumbs
- Cook pasta according to package.
- While pasta is cooking, saute onion and sausage until onion is soft. Add frozen veggies and cook about five minutes more.
- After pasta is cooked combine with sausage mixture.
- Make the cheese sauce by melting the butter. Once melted add the flour and cook slightly to make a roux. Slowly add cream and stir until thickened. Add two cups cheese and stir until melted.
- Mix the cheese sauce in with the pasta and sausage, and top with bread crumbs and 1/4 cup cheese, and bake at 350 for 30 minutes.
