Now that the cold weather it here for good, the crock pot is making a regular appearance.
Do you have a crock pot?? If not, you really, really, need to get one. There is nothing better than throwing your ingredients in, and just walking away. Then, coming back to a fully cooked meal! One of my go to meals in the fall is this crock pot chili. It takes so little time, and turns out great. If you like white chili, then check out this white chicken chili recipe. Once again, it’s made in the crock pot, so you don’t have to worry about watching it.
At any rate, this chili is so easy to make, and it tastes great. The only prep work is cutting everything up, and browning the meat before putting it in the crock pot.
Matt loves chili, so I’m always trying to find a new recipe to try. Â He told me this is some of the best chili he’s had. Â When I told him I made up the recipe, he was like “you better write down what you did right now”.
I totally didn’t take pictures, but the whole thing is pretty easy!
I will say this, Â be careful with the jalapenos! Depending on how hot you like your chili you can either leave or take out the seeds. Â I usually go with 1/2, which makes it hot enough for my husband, but still mild enough for me. Â If my husband had it his way, he would want all the seeds, but ain’t no way I could handle that.

- 1 pound ground beef
- 1 medium onion diced
- 2 gloves garlic
- 1 green pepper
- 1-2 diced jalapenos
- 2 14.5 oz cans kidney beans
- 2 14.5 oz cans diced tomtoes
- 1 small can tomato paste
- 1 teaspoon cumin
- 3 tablespoons chili powder
- 1 teaspoon pepper
- 1/2 teaspoon red pepper
- Brown the beef in a skillet. After it is cooked through place in crock pot.
- Drain one can of kidney beans and one can of diced tomatoes and place in crock pot.
- For hotter chili leave the seeds in the jalapenos. For milder chili discard the jalapeno seeds. Be careful when dicing jalapenos! If you get the oil on your hands and then rub your eyes, it hurts.
- Put the rest of the ingredients in the crock pot and stir to combine.
- Cook on high for 3.5 hours.
