It’s blueberry season here in Michigan. The time when they sell huge 5-10lb boxes of them in the grocery store. You better bet I pick one of those bad boys up at least every other weekend. Now, 10lbs is a ton of blueberries, and while I love to eat them on my cereal, or in pancakes, I’ve got to use them in other ways too. One of my go to recipes are these blueberry banana muffins.  They were actually the first thing we baked in the new house! But today I branched out a bit, and made some delicious blueberry coffee cake, with streusel topping. Then drizzled it with a cream cheese glaze. So tasty, and totally counts as breakfast food right?
So to start off with you are going to make a blueberry filling. Take 1 1/2 cups of blueberries, and place them in a pan with 1 T sugar.
Cook for about 10 minutes until some of the berries start to burst. Then add 1.5 t cornstarch mixed with 1 T water. Add to the berries to thicken
While that cools, make the batter by mixing the butter, sugar, egg, vanilla, and lemon zest together. In a separate bowl combine the flour and baking soda.  Alternate adding the flour mixture and milk into the butter mixture. Then fold in the rest of the blueberries.
Place half the batter into a pan. I used an angel food cake pan, but I’m pretty sure any pan would work.
Top that with the blueberry filling you made.
Then place the rest of the batter on top. You may have to spread it around a little.
Top that with the streusel topping, and bake for 35-45 minute.
After it has cooled slightly, top with the cream cheese glaze. Eat and enjoy!
- 1 stick softened butter
- 1/4 cup brown sugar
- 1/2 cup white sugar
- 1 t vanilla
- 1 egg
- 2 cups flour
- 2 t baking soda
- 3/4 cup milk
- 1 cup blueberries
- 1 T lemon zest
- 1 1/2 cups blueberries
- 1 T sugar
- 1 1/2 t cornstarth
- 1 T water
- 4 T softened butter
- 1/2 cup flour
- 1/2 cup brown sugar
- 3 T cream cheese
- 3/4 cup powder sugar
- 2-3 T milk
- First make the filling by placing the blueberries and 1 T sugar into a pan, and cook over medium heat until some of the berries start to burst (about 10 minutes). In a separate bowl combine the cornstarch and water. Add this to the berries to help thicken them up. While cooling, make your batter.
- Mix the butter, sugar, brown sugar, egg, lemon zest, and vanilla together.
- In a seperate bowl mix combine flour and baking soda.
- Alternate adding the flour mixture and the milk to the butter mixture. Then fold in the blueberries.
- Add half the batter to your pan. Top this with the blueberry filling. Then top that with the rest of the batter.
- Make your streusel topping by mixing the butter, flour, and brown sugar together. Sprinkle of the top, and bake for 35-45 minutes.
- Make the cream cheese glaze by mixing the cream cheese, powder sugar, and milk together. Spread over the top of the cake, and enjoy.
I’m still trying to find the best places to take pictures in this house. In our old house I knew which areas had great light, and how to set everything up to get some great pictures. Plus we had a wood deck, which was in need of a good staining. But that made for a great weathered wood background. Not so much in this house. The deck here is Trex, which is great, since we won’t have to worry about staining, but it just doesn’t give me what I need. #bloggerproblems. I may be heading to HD to get some wood to make mock floor for taking pictures on.
And I swear, one of these days I’ll do a little home tour. It’s just pretty chaotic in the house right now. I mentioned this on IG, but HGTV gave me unrealistic expectations of moving in. Three weeks after moving in, and they house is all put together?! Right…I can only assume they threw all the boxes that are normally all over the house in room that wasn’t shown.
