A few week ago I mentioned to Matt that I wanted to host a Friendsgiving. He looked at me like I damn near lost my mind, which looking back is fair enough. We are trying to get some things done around the house before Baby #3 make her appearance, so hosting a party would probably not be the best idea. So instead, I decided to host a Thanksgiving play date with my moms club. Everyone brought a dish to share, and I found some place mats in the Target dollar spot for the kids to color. I made these turkey stuffing biscuit bites and they were a hit. I also made pumpkin pie bites, but I’ll be sharing those another day.
- 1 package Pepperidge Farm Stuffing
- 4 cups diced cooked turkey
- 3 cans refrigerated biscuits
- 1/2 stick butter
- 1-2 stalks celery cubed
- 2 T flour
- 1/2 cup milk
- Make stuffing mix on stove according to package.
- Once it is ready, mix in the cooked turkey. You could also shred the turkey if you don't want to cube it. Use white meat, dark meat, or a mixture.
- Make the roux my melting the butter and sauteing the celery for a few minutes. Then add the flour and cook for about another minute. Add the milk and allow to cook for a few minutes. Mix this into the stuffing mixture.
With Thanksgiving coming up, I knew I wanted to get the stuffing bites on the blog ASAP. Although I made them with fresh stuffing and turkey, this would be a great way to use up any leftovers you may have from Thanksgiving.
The Thanksgiving play date was a big a hit! The kids all had a great time coloring the place mats and playing with our toys. And the moms had a great time chatting with each other.
We also had a great selection of food! Like I said earlier, besides the Turkey Biscuit Bites (which is the best name I could come up for them. If you have any suggestions of a catchy please let me know), I made Pumpkin Pie Cups, as well as some pretty yummy mulled cider. We also had Mac and Cheese Bits, PBJ bites, pumpkin bread, cookies and brownies, and veggies and hummus. It was such a fun way to celebrate Thanksgiving with some friends.
