Now that the snow is hopefully done, I’ve got spring on my mind. Besides flowers blooming and sun, when I think of spring, salads come to mind. Growing up I hated salad dressing, and therefore I hated salads. Now that I am older (and wiser) I love a a good salad, and one of my favorite salads is antipasto, with a balsamic vinaigrette dressing.
I’ve been wanting to put this on the blog for a while now, and finally was able to whip it up and take some pictures.
First up let’s talk about the salad. This salad is a combination of two of my favorite antipasto salads from local pizza places. It includes lettuce (my go to is romaine), mozzarella cheese, chick peas, hard salami, and tomatoes.
I didn’t include any measurements since it is really all up to you. If you really love cheese, then puts lots of cheese in it. If chick peas aren’t your favorite then go light. After mixing up your salad it’s time to add this fabulous balsamic vinaigrette dressing.
- 3/4 cup olive oil +2 T for a little less of a vinegar taste
- 1/3 cup balsamic vinegar
- 1 teaspoon garlic
- 1 teaspoon basil
- 1/2 teaspoon oregano
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 teaspoons honey
- Mix all ingredients in a mason jar, and shake to combine.
This dressing is so easy to make, and tastes great on any salad, not just an antipasto one.
