I can’t believe that it’s been over a month since I last posted a recipe! To be honest, I’ve been kinda burnt out on the cooking end (ask Matt, he’d agree). One week I just didn’t meal plan, and it was a sh*t show disaster. Seriously. I don’t know how people don’t meal plan! How do you know what to buy? How do you have time to figure out what to make? When to start making it? After the craziness of the holidays, I think I have finally gotten back into the swing of things, and am hoping to get more recipes on the blog.  With that said, this edible red velvet cookie dough isn’t exactly something you meal plan, but it’s still pretty tasty!
Two years ago, I made these rolled Red Velvet Cookies. This year I wanted to do something just a little different. Now, I call this an edible cookie dough, but really it’s almost like a truffle. It ends up being pretty dense. Is still tastes delicious, but just not super fluffy. It’s meant to be rolled, and wouldn’t be a good choice to eat with a spoon.

- 1 cup flour
- 1/4 cup cocoa powder
- 1/8 teaspoon salt
- 1/4 cup buttermilk
- 3-4 teaspoon red food coloring
- 1/4 cup sugar
- 2 tablespoons butter
- 4 tablespoons cream cheese
- 1/4 cup white chocolate chips
- Cream the butter, cream cheese, and sugar together.
- In a separate bowl mix the buttermilk and food coloring. Add this to the butter mixture.
- In another bowl mix the flour, cocoa powder and salt together. Mix in the buttermilk/butter mixture until dough comes together.
- Fold in white chocolate chips and roll into balls. Your hands will probably get slightly dyed due to the red food coloring.
It’s not a super sweet cookie dough, but still super tasty. Dare I say, it’s just a tad tangy which comes from the buttermilk. A great little treat to make for someone for Valentine’s Day, or make it for yourself, just because!
