I am always looking for a good muffin recipe to use up bananas that are going brown. Â So far I’ve done a Banana Blueberry recipe, and a Nutella Stuffed Banana one. Â Both are delicious. Â This time I decided to step it up and make it extra chocolate-y.
And, if we are being honest, these are probably way more like cupcakes than muffins, but I’m sticking with muffins. Â That makes them O.K. to eat for breakfast, yes?
So how do you make these yummy, yummy “muffins” (scroll down to get the printable recipe).
ONE
Mix the flour, cocoa powder, baking soda, and baking powder together.
TWO
Use a stand mixer to mash your bananas. Â Simply put on the paddle attachment and turn it on.
THREE
Add the sugar, yogurt, egg, vanilla, vegetable oil, and Nutella to the bananas and mix.
FOUR
The batter will be a little bit thick, scoop it into a cupcake tray.
FIVE
Bake for 20-30 minutes at 350 degrees.
After about five minutes I take them out of the tray and let them finish cooling on a wire rack.
- 1 3/4 cups flour
- 3/4 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2/3 cups sugar
- 1/2 cup yogurt
- 1 egg
- 1 1/2 teaspoons vanilla
- 1/3 cup vegetable oil
- 1/4 cup nutella
- 3/4 cup chocolate chips
- 2-3 bananas
- Preheat oven to 350 degrees. Mix the flour, cocoa powder, baking powder, and baking soda together.
- In a stand mixer, mash the bananas using the paddle attachment. Then add the sugar, yogurt, egg, vanilla, vegetable oil, and Nutella. Mix until blended.
- Slowly add the dry ingredients to the wet, stirring until just combined. Then fold in the chocolate chips.
- Bake for about 20 minutes, or until a toothpick comes out clean.
